    SILKIE WHISKEY
    The Legendary
    Silkie Irish Whiskey
Inspired by tales of the mythical Silkie seals of the Donegal coast, The Legendary Silkie Irish Whiskey is a balanced blend of double and triple distilled single malts, soft grain whiskey and a hint of peated malt. Bottled by hand and non-chill filtered for a distinctively rich character, it is exceptionally smooth even though higher in ABV, with crisp green apple to the fore, ripe red fruits, gentle smoke and an oaky sweetness giving way to a long, lingering finish of gently warming spice. Perfect as a sipping whiskey to enjoy as is, over ice or in your favourite whiskey cocktail, The Legendary Silkie’s signature serve is the Silkie Rua, which is Silkie mixed with premium ginger ale over ice and garnished with orange peel.

    SILKIE WHISKEY
    The Legendary
    Dark Silkie Whiskey
An ode to the Donegal whiskeys of days gone by, The Legendary Dark Silkie Whiskey is a rich smoky blend loaded with character. Non-chill filtered and incredibly smooth with a stunning natural sweetness, it draws inspiration from the rich folktales of the Silkie seals, often told by the glow of a turf fire. At its core, The Dark Silkie is a triple distilled single malt which is matured in sherry and peated to 22ppm from 55ppm post-distillation, giving it a rich sweet smoky flavour.

    SILKIE WHISKEY
    The Legendary
    Red Silkie Whiskey
The Legendary Red Silkie Irish Whiskey not only draws inspiration from the folklore of Donegal, but also the rich history and heritage of the county. It is finished in Rioja and Ribera red wine casks from the Ribera del Duero wine region, which lies just to the east of the final resting place of Red Hugh O’Donnell at the Castle of Simancas in Spain. Wines from the Ribera region tend to be full bodied with firm tannins, while Rioja wines lead with big fruit flavours. This combination of finishes gives the whiskey extraordinary depth of character that matches the signature softness of the award-winning Silkie blend.

    AN DÚLAMÁN
    Irish Maritime Gin
In the shadow of Sliabh Liag, the distillers of An Dúlamán use eleven botanicals in all. Six conventional varieties create a robust base while five locally harvested seaweeds capture Draíocht na Farraige – the magic of sea. Bottled by hand with each batch and bottle number handwritten on the neck label, An Dúlamán is distilled in small batches at an ABV at which its delicate and complex flavours can best be savoured.

    AN DÚLAMÁN
    Santa Ana Armada
    Strength Gin
The first navy strength gin produced in Ireland, An Dúlamán Santa Ana is aged in Rioja wine casks, which impart a slight sweetness and beautiful rose-gold hue to the complex maritime notes of An Dúlamán. The name Santa Ana comes from one of the many ill-fated ships of the Spanish Armada, La Duquesa Santa Ana, which ran aground off Loughros Mór near Ardara in Donegal. Don Alonso de Leyva, the commander of this ship, was also a nobleman from the Rioja region of Spain. All 900 men aboard walked 30km from Loughros Mór to Killybegs where they met another Armada ship, La Girona – a pilgrimage of sorts that is re-enacted every year.

    ASSARANCA
    Vodka
Assaranca Vodka is a soft quadruple distilled grain spirit, with the fourth and final distillation taking place with rowan berries in the pot and hand-picked local gorse flowers in the flavour basket. Rowan and gorse are two native plants that shower the landscapes of Donegal with a bright splash of colour at certain times of the year. While rowan trees bear their bright red berries in late summer and early autumn, gorse (or whin bushes) flower almost all year round. The latter’s brilliant yellow flowers have the unmistakable scent of coconut which wafts lazily across bogs and mountains on warm summer days. Rowan and gorse can both be found at the gorge that leads to the falls at Assaranca in Donegal.
